¿Por qué Santibáñez de Béjar es el lugar perfecto?
Nuestra fábrica está situada en este pequeño municipio de la comarca de Béjar, en plena provincia de Salamanca. Una zona tradicionalmente ligada a la producción de embutidos ibéricos, y no por casualidad.
- Altitud entre 800 y 1.500 metros: favorece la circulación natural del aire y reduce la humedad excesiva, clave para evitar mohos indeseados.
- Veranos cálidos e inviernos fríos: un equilibrio ideal para una maduración lenta y progresiva a lo largo del año.
- Temperatura media de 12ºC y humedad controlada: dos factores que permiten una curación natural sin prisas.
Durante el verano, lejos de ser un problema, el calor de esta zona actúa como un acelerador natural de ciertos procesos. Eso sí, siempre bajo vigilancia. En Pefrán controlamos manualmente la ventilación de los secaderos, abriendo y cerrando ventanas para regular el paso de aire y evitar cambios bruscos. Esto nos permite conseguir una maduración equilibrada que potencia el sabor sin alterar la calidad del producto.
¿Cómo cuidamos el proceso durante los meses cálidos?
Nuestros chorizos, salchichones y lomos ibéricos se curan en bodegas y secaderos naturales, aprovechando al máximo el entorno sin necesidad de grandes intervenciones mecánicas. Cada pieza se revisa a diario, respetando el ritmo que marca el clima de la comarca.
Porque aquí no se trata de acelerar procesos, sino de respetarlos.
