Y en Ib\u00e9ricos Pefr\u00e1n, sabemos que <strong>Santib\u00e1\u00f1ez de B\u00e9jar<\/strong> ofrece las condiciones perfectas para que el entorno marque la diferencia.<\/p>\n\n\n\n<p><strong>\u00bfPor qu\u00e9 Santib\u00e1\u00f1ez de B\u00e9jar es el lugar perfecto?<\/strong><\/p>\n\n\n\n<p>Nuestra f\u00e1brica est\u00e1 situada en este peque\u00f1o municipio de la comarca de B\u00e9jar, en plena provincia de Salamanca. Una zona tradicionalmente ligada a la producci\u00f3n de embutidos ib\u00e9ricos, y no por casualidad.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Altitud entre 800 y 1.500 metros:<\/strong> favorece la circulaci\u00f3n natural del aire y reduce la humedad excesiva, clave para evitar mohos indeseados.<\/li>\n\n\n\n<li><strong>Veranos c\u00e1lidos e inviernos fr\u00edos:<\/strong> un equilibrio ideal para una maduraci\u00f3n lenta y progresiva a lo largo del a\u00f1o.<\/li>\n\n\n\n<li><strong>Temperatura media de 12\u00baC<\/strong> y <strong>humedad controlada<\/strong>: dos factores que permiten una curaci\u00f3n natural sin prisas.<\/li>\n<\/ul>\n\n\n\n<p>Durante el verano, lejos de ser un problema, el calor de esta zona act\u00faa como un acelerador natural de ciertos procesos. Eso s\u00ed, siempre bajo vigilancia. En Pefr\u00e1n controlamos manualmente la ventilaci\u00f3n de los secaderos, abriendo y cerrando ventanas para regular el paso de aire y evitar cambios bruscos. Esto nos permite conseguir una maduraci\u00f3n equilibrada que potencia el sabor sin alterar la calidad del producto.<\/p>\n\n\n\n<p><strong>\u00bfC\u00f3mo cuidamos el proceso durante los meses c\u00e1lidos?<\/strong><\/p>\n\n\n\n<p>Nuestros chorizos, salchichones y lomos ib\u00e9ricos se curan en <strong>bodegas y secaderos naturales<\/strong>, aprovechando al m\u00e1ximo el entorno sin necesidad de grandes intervenciones mec\u00e1nicas.
